It seems our lives are much busier than I ever thought they would be. Some nights it’s hard to get dinner on the table and we have grilled cheese much more than I’d like to admit. Luckily, we love tacos (who doesn’t!) they are quick and easy. We like to switch them up, hard or soft tortillas, beef, chicken, turkey or pork. Last night it was ground turkey and soft flour tortillas. I had been buying the packets of taco seasoning mix and thought that there has to be something better. After a few hits and misses I have found the recipe for homemade taco seasoning that works for us. It’s adaptable to a variety of meats either ground or shredded, mild enough my son and husband will eat it and has much less sodium than the pre-packaged. I use a heaping teaspoon to 1 pound of ground or shredded beef, 1 1/2 to 2 heaping teaspoons to 1 pound of ground turkey or shredded chicken. Brown the ground meat or add shredded meat to your skillet, sprinkle on the seasoning then add a cup or so of water. Let the liquid simmer out and the meat will soak in the flavors of the seasoning. I store it in a pint jar, it will last us nearly a year. You can use this recipe as a base, then adjust to the level of heat you like. It is very mild as it is, which is how my family prefers.
Taco Seasoning Mix
1/2 c. chili powder
1 rounded Tbsp. each of garlic powder, onion powder, paprika and cumin
2 Tbsp. salt
Put all ingredients in a glass jar, stir or shake until blended.
