If you find yourself looking for a quick and easy little something to have with your coffee or tea you have to try Easier Than Coffee Cake Bars. Sweet, but with a little bit of tang, they are moist, rich and delicious. An added plus, you probably have all the ingredients without having to make a trip to the grocery store!
Easier Than Coffee Cake Bars
1 box yellow cake mix
1 cube butter, softened
2 eggs
4 c. powdered sugar
8 oz cream cheese, softened
1 t. vanilla
raspberry, blackberry or blueberry jam, optional
Mix well together the cake mix, butter and eggs. With clean hands press into the bottom of a greased 9 x 13 pan. In another bowl beat the cream cheese, powdered sugar and vanilla until smooth. Spread evenly over the cake mixture. If you are using one of the jams dollop some around the top with a teaspoon then gently swirl it around. It is equally delicious without any of the jams or you might find another flavor you like better. Bake in a 350° oven for 35 minutes. Let cool some before cutting as they are a little gooey. Pour a cup of tea or coffee and enjoy!
