Before Brad and I moved to Idaho we lived in a small community outside of Yakima. There is a little community church there and the Pastor’s wife was just the sweetest lady. Kaye was kind enough to share this recipe, I think you’ll like them as much as we do.
Kaye’s Macaroon Cookie Bars
Crust: 1 box Devil’s Food cake mix or the dry ingredients of your favorite recipe
1/2 c. butter, softened
1 egg
Pre-heat oven to 350°, grease and flour a 9 x 13 pan. In a large bowl combine crust ingredients on low speed until well combined, mixture will be crumbly. Press evenly into the bottoms of the greased pan.
Topping: 14 oz. can sweetened condensed milk (not evaporated)
1 t. vanilla
1 egg
1 1/4 c. flaked coconut
1 c. nuts, chopped (I like pecans)
1 c. chocolate chips (optional)
In a small bowl combine condensed milk, vanilla and egg, beat until smooth. Stir in 1 c. coconut and nuts, pour over crust. Sprinkle with the remaining coconuts and chocolate chips if you are using them. Bake for 30 to 35 minutes or until golden brown. Cool completely before cutting.
As you can see in the picture I couldn’t wait to dig in so it’s a little gooey and warm but delicious!
