Buttermilk Pound Cake

This is a delicious and easy to make pound cake that goes well with berries in season and whipped cream or warmed up with a cup of coffee or tea.  You can add a quick glaze of powdered sugar mixed with a little milk if you’d like, but it’s just as good without it.  Let me know what you think!

Buttermilk Pound Cake

1 c. butter

3 c. sugar

4 eggs

1 c. buttermilk

3 c. flour

1/2 t. baking powder

In a large mixing bowl cream the butter then slowly add the sugar while mixing.  Add the eggs one at a time mixing well after each egg then mix in the buttermilk.  Add the flour and baking powder, mix well.  Bake in a Bundt or tube pan at 350• for 70 minutes.

**If you don’t have buttermilk you can add 1 T. vinegar or lemon juice enough milk to make 1 cup, let stand for 5 minutes.  Other substitutions are plain yogurt or 1 3/4 t. cream of tartar added to 1 cup of milk.
