Aunt Sissy’s Banana Bread

I think most people probably have a banana bread recipe or two floating around.  While thumbing through my recipes last night, I discovered between my family and Brad’s I have five!  I always have a few bananas in my freezer and I thought what better way to warm up the kitchen on this cold and rainy day.  This particular recipe came from my Aunt Sissy and is Brad’s favorite, I’ve made it so many times I can practically make it in my sleep!  I leave out the nuts, our son doesn’t like them.  Warm out of the oven with a pat of butter and a hot cup of tea, oh my goodness, it’s delicious.

Aunt Sissy’s Banana Bread

1 3/4 c. flour

1 1/4 tsp. baking powder

1/2 tsp. baking soda

3/4 tsp. salt

2/3 c. sugar

1/3 c. shortening

2 eggs

1/2 c. broken pecans

1 c. mashed bananas (2 to 3 bananas)

Sift together dry ingredients, set aside.  Gradually add sugar to the shortening, cream together until fluffy.  Blend in eggs, mixing until smooth.  Stir in nuts.  Add flour mixture alternating with banana pulp, mixing well after each addition.  Pour into a well greased large loaf pan (about 9″ x 5″ x 3″).  Bake at 350° for 1 hour or until browned.  Cool on a wire rack.  Enjoy!
